The Jiangshui Noodles is a kind of noodles with fermented vegetable juice. Legend has it that the Jiangshui Noodles came into being in the Qin Dynasty, and now remains widely popular in Shaanxi and Gansu. It is a kind of home-cooked food that has a history of thousands of years.


In the midsummer, the people of Lanzhou fall precisely together with eating the Jiangshui Noodles. Many noodle restaurants hang out a sign saying “Jiangshui Noodles, Pig Trotters and Pork Ribs”. When you walk in the door, waiters will fist serve up a bowl of Jiangshui(fermented vegetable juice) for you to drink to quench your thirst and relieve summer heat before you order food. Upon slurping the juice, you will feel cool, refreshed and appetitive.


The people of Lanzhou have a complete process to eat the Jiangshui Noodles. First, they take out a pot of clear juice; put a little vegetable oil in a ladle to heat it; put dozens of Chinese prickly ash seeds and one or two slices of ginger in the oil and then throw them away after their scent comes out; put fried chopped green onion in the juice, add an appropriate amount of salt and spread cilantro on it; then boil thin handmade noodles in another pot, get the noodles out of the pot to drain water, and put it in cool boiled water for cooling; finally put the noodles in bowls and pour juice into the bowls.


The people of Lanzhou exquisitely prepare dishes for the Jiangshui noodles. The most delicious dishes are salted leeks with pan-seared green chili pepper and pot-stewed meat, followed by pot-stewed pig trotters or braised spare ribs in brown sauce. The diet is healthy, because massive lactic acid bacteria are produced in the making process of vegetable juice, and the bacteria help to purge guts and promote digestion. However, since the non-fatty Vegetable Juice Noodles cannot maintain satiety for too long, some meat can be eaten. Tasting non-greasy but cool, tasty and refreshing, the food helps to greatly increase appetite.
