Chinese New Year flavor in Lanzhou

There is a saying in Northern China “leavening dough on the December 28; making steamed buns on December 29”. Lanzhou is in Northern China and is no exception. Lanzhou natives seem not like steamed buns, but they love steamed twisted rolls.

Lanzhou natives value the New Year steamed twisted rolls a lot, because they have the custom of exchanging steamed twisted rolls with neighbors at the Chinese New Year. So they thoroughly prepare to make good-looking and delicious steamed twisted rolls.


To make good steamed twisted rolls, kneading is very important. Knead the leavened dough repeatedly to drive out air. Let is stand for 10 minutes and continue to knead it after adding a little bit of dietary alkali until the dough becomes smooth. Nowadays, Lanzhou people often eat steamed twisted rolls. And there are many kinds of twisted rolls. However, the most delicious twisted rolls are those Lanzhou natives prepare for the New Year.
