Lanzhou Minced Noodles

Minced noodle is a kind of famous traditional noodle of Han nationality in Lanzhou. It originated from the "Longevity Noodles" of the Tang Dynasty which used to be a good treat for old people's birthday, children's birthday and other festivals to wish people a long life. Lanzhou minced noodle is characterized by its northwest flavor. Although people use the same ingredients with pretty much the same cooking methods, the taste of minced noodles made in different household differs from one another. The minced noodle soup can be used to soak steamed buns. People tear steamed buns or steamed twisted roll into pieces and soak them into the minced noodle soup. What a delicious dish! Put mature vinegar, two tablespoons of oily spicy pepper, some pot-stewed meat and two pan-seared green chili pepper into the noodle and you will eat so comfortably with a plate of salty leeks. This is a good treat for old people's birthday, children's birthday and other festivals which implies “longevity”.
